White chocolate Cheesecake
This creamy cheesecake is the perfect dessert for a birthday gift or to surprise your friends or family!
Tightly wrap aluminum foil around the springform pan covering bottom and sides.
In a small glass bowl, microwave 1 cup of white chocolate. Set aside.
In a stand mixer, beat the butter, cream cheese and sugar until smooth.
Add the eggs, one at time.
Add sour cream, until incorporate.
Pour the white chocolate, vanilla extract and add cornstarch until incorporate.
Beat for aprox 3 mins.
Pour the mix into springform pan and place in a roasting pan. Very carefully, pour boiling water and bake for 90 mins or until cheesecake is lightly browned on top.
Remove from bain-marie, remove aluminum foil and cool completely.
In a small glass bowl, microwave white chocolate with the heavy whipping cream, whisk until incorporate.
Add the blueberries and pour on top of the cheesecake. Refrigerate for 20 minutes and it´s ready to serve.
