Ingredients

For Crust

1 1/2 cups all purpose flour
90 grs unsalted butter cut into small cubes
1/2 tsp salt
1/2 tsp sugar
3 tbsp ice water

For Ricotta Filling

1.5 cups ricotta cheese
1/2 cup parmesan cheese, grated
1 tbsp dried basil
1/2 tsp onion powder
1/2 tsp garlic powder
2 eggs M
1 tomato L sliced
salt
pepper

Instructions

In a stand mixer, place all ingredients for the crust and mix until incorporated.

Using your fingertips, press the dough into four 10 cm tart pan with removable bottom. Freeze for 30 mins.

Preheat oven to 200 degrees.

In a medium glass bowl, mix all ingredients for the tart filling (except tomato slices) and whisk until all incorporated. Set aside.

Pour ricotta filling in the freeze crust, arrange the tomatoes in top sprinkle salt and pepper.

Bake for 50- 60 minutes until the tomatoes appear dry and the crust is golden brown.

This tarts served warm, really delicious!
