Tacos al Pastor Recipe

Tacos al Pastor Recipe-Guacamole and chipotle sauce. Yummy!

This authentic Mexican tacos al pastor recipe is made with marinated pork, pineapple, chipotle sauce, and guacamole sauce. Really delicious!

Ingredients

For Pork Marinated

2 lbs pork shoulder, boneless
1/4 cup onion, chopped
2 tbsp achiote paste
1/8 tsp ground cloves
1/8 black ground pepper
1/8 tsp ground cumin
1/2 tbsp oregano
salt
5 garlic cloves
1 cup pinneaple juice
1/4 cup white vinegar

1/2 cup canola oil, for cook al pastor.

For Guacamole Sauce

1 avocado, ripe
1 fresh serrano
1/4 cup onion, chopped
1/4 cup cilantro, chopped
2 tbsp canola oil
2 garlic cloves
2 tbsp white vinegar
salt
pepper
1/2 cup water

For Chipotle Sauce

1 cup tomato puree
1/4 cup in adobo chipotles, canned
1 garlic clove
1/8 tsp cumin
salt
pepper
1/2 or 3/4 cup water

For Assembly Tacos

2 lbs corn tortillas
2 cups onion, finely chopped
2 cups cilantro, chopped
Limes, quartered
2 cups pinneaple, diced

Instructions

In a blender add all the pork marinade ingredients, except pork shoulder. Blend until puree.

Now, in a large glass bowl set pork shoulder, pour the marinade and mix until incorporated. Cover and chill for 2 hours.

In a large skillet at medium heat, pour the 1/2 cup canola oil and add marinated pork. Cook until golden lightly brown.

For guacamole sauce, in a food processor and puree until smooth. Season with salt.

For chipotle sauce, transfer all ingredients in a food processor and puree until smooth.

Serve tacos with warmed tortillas, cilantro, onion, pineapple, sauces and squeeze lime juice.
