This shrimp and guacamole burger recipe is AMAZING… Crispy shrimp, chipotle dressing and easy guacamole recipe is the best compliment!

For Crispy Shrimp

1 pound clean shrimp without shell and tails
1 cup all purpose flour
1 tbsp cornstarch
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black ground pepper
1/4 tsp smoked paprika
1 cup buttermilk
1 egg L

For chipotle dressing

1 cup mayonnaise
1/4 cup in adobo chipotles, canned

For Guacamole

1 avocado
1/4 cup onion, chopped
1/4 cup tomato, chopped
1 garlic clove
1 fresh serrano
1/4 cup cilantro, chopped
1 tbsp white vinegar
1 tbsp olive oil
Black ground pepper

For burgers

1.5 cups canola oil
4 buns



Whisk very well egg in the buttermilk.


Place shrimps in a medium glass bowl and pour buttermilk mixture over the top until they are submerged.


Take another bowl and add the flour and seasonings. Mix with a fork to combine.


Working with one shrimp at a time, remove shrimps from buttermilk. Dredge in flour mixture, turning to coat evenly. Dip again it into the buttermilk then back into the flour mixture. Place coated shrimps on a round dish…


Heat the canola oil in a medium saucepan and fry shrimps until crispy. 


Drain shrimps and set aside.


For chipotle dressing, in a food processor mix all ingredients until a homogeneous mixture.


For guacamole, blend all ingredients and season, pour guacamole sauce in a small bowl. 


Lay the buns, cut side down, on grill and cook until lightly toasted.


To make the burgers, spread the chipotle dressing on buns, now place 5 or 6 shrimp and guacamole on top. Put the bun tops in place.

With this ingredients you can make the guacamole and conserve in the fridge for 1 or 2 days more.
