Refried Beans and Eggs Toast

For this recipe we are going to make refried beans. First, we will soak the beans overnight, and then we will cook them, lastly we will make the refried beans, we will use them for our toasts and other dishes.

Ingredients

For Cook Beans

1 kg black beans, dried. Soaked overnight.
4 garlic cloves
1/2 onion, M
Salt.
Water.
Large stockpot

For Refried Beans

2 cups black beans, cooked.
2 tbsp canola oil
1 serrano peper, chopped.
1/4 cup onion, chopped.
salt.

For toasts

1/4 cup refried beans
2 integral bread slices
2 fry eggs
Salt and black pepper.

Instructions

Soak the black beans overnight.

Then, cook in water the black beans.

When they are almost cooked, add the onion, garlic and salt.

When they are fully cooked, heat the canola oil in a saucepan and add the serrano pepper, onion and salt. Fry for 4 mins

Now, add the beans, be careful because it is hot.

Bring to a boil and blend the beans with a food processor.

Turn off the heat and spread the toasts with refried beans. Add the fried egg on top.

The beans have a spicy and delicious flavor!
