Mexican Chilorio Burritos

Mexican Chilorio Burritos

Chilorio is a recipe native to northern Mexico, it is shredded pork and seasoned with dried Mexican chili peppers and spices, it is cooked with pork lard. You can make taquitos with corn or flour tortillas. Additionally, chilorio is served with pickled onion with lime juice. Chilorio it´s a perfect party dinner!

Mexican Chilorio Burritos-reciperella

Ingredients

2 lbs pork shoulder
2 bay leaves
Water

For chilorio adobo recipe

6 guajillo peppers. Deseeded and clean
4 garlic cloves
1/2 cup onion, chopped
salt
pepper
2 tbsp white vinegar
2 cups water
2 tbsp pork lard

For Burritos

2 lbs corn or flour tortillas

For Onion

1 onion, L Thinly sliced
4 tbsp lime juice
Salt

Instructions

First, cook the pork shoulder into water and bay leaves. Reserve when pork is cooked.

Now, in a small bowl place the sliced onion and pour lime juice, season with salt and mix. Reserve until make the burritos.

Cook guajillos until soft, approx 12 mins at low-medium heat. Cool completely.

When pork is cool, shred with a fork.

Blend guajillos, garlic, white vinegar, onion, salt and pepper until puree.

In a large skillet, at medium heat, melt the pork lard. Place the shredded pork and pour chilorio adobo, whisk and cover. Cook for 15-20 mins. The chilorio pork is an compact consistency, lightly golden, season.

Make burritos with warm tortillas and serve in top with onion… Enjoy!
