Breakfast Potato Casserole

You will love this recipe, it is simple and very quick to cook. You can make tacos or tostadas, on top with hot sauce and more onion and chopped coriander.

Ingredients

1 kg potato, cooked
4 beaten eggs
1 serrano pepper, chopped
1/2 cup onion, chopped
1/2 cup tomato, chopped
2 tbsp Reciperella´s garlic paste
1/4 tsp black pepper, ground
1/2 tsp cumin, ground
1/2 tsp paprika
Salt
3 tbsp olive oil

Instructions

Peel the cooked potatoes and cut them into medium pieces.

In a saucepan, over medium heat heat the olive oil.

Add serrano pepper, onion, tomato, and garlic paste. Fry for 3 minutes.

Then, add a pinch of salt and add potatoes.

Mix and fry for some 5 mins more.

Add paprika, cumin, black pepper, and eggs. Beat slowly until the egg is cooked.
