This low carb stuffed meatballs recipe is made with coconut oil, is very creamy and spicy. Ideal for breakfast, the egg is delicious! Also, you can incorporate mashed potatoes or serve with sourdough bread for the all members of your family.

Ingredients

For meatballs

6 boiled eggs
1 pound ground pork
1 pound ground beef
1/2 cup onion, finely chopped
1/2 cup chopped parsley
1 tbsp garlic, chopped
1 egg L
Salt
1/2 tsp black ground pepper

For Creamy Sauce

1/2 tbsp chipotle chili powder
2 cups tomato puree
1 cup heavy whipping cream
2 garlic cloves
1 cup beef broth
1/4 tsp ground cumin
1/4 tsp black ground pepper
Salt

1 cup coconut oil or butter

Instructions

In a large glass bowl place all ingredients for meatballs except boiled eggs, mix until combined and set aside.

Take a two scoop of the meat mixture approx and put one boiled egg inside. Shape the meat mixture with your hand to completely cover the boiled egg and make into a big meatball. Take care there are no cracks in the meatballs. Meanwhile set the meatballs in a round dish. Repeat with remaining meat mixture until make six meatballs.

In a large skillet, at low heat melt the coconut oil and very carefully fry all meatballs until golden brown, drain in a paper sheet and reserve.

Let’s make the creamy sauce. Blend very well all ingredients until puree and season.

In a medium saucepan, at low heat pour the creamy sauce and place the meatballs, cover and cook for 10 mins.

Serve a meatball and creamy sauce in deep plates.
