Irish Cream Cornbread

This cornbread is delicious! For breakfast or any day, I love it with a cup of black coffee. Yumm!

For Irish Cream Cornbread

1.5 cups all purpose flour
1/2 cup cornmeal
1 1/4 cups granulated sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
Zest of two lemons
3 eggs, L
3/4 cup olive oil
1/4 cup irish cream
1 1/3 cups whole milk



Preheat the oven to 350 degrees, butter and flour a 8″ round cake pan


It’s so very easy, first in a medium glass bowl place all purpose flour, cornmeal, baking powder, baking soda and salt. Mix and set aside.


Then, in a stand mixer add eggs, sugar and lemon zest. At low-medium speed for 4 mins until fluffy, add the olive oil, milk and irish cream, whisk together until all incorporated.


Add the dry ingredients and mix.


Bake for 45-50 mins and cool completely before serving.
