Ingredients

For Pickled Onion

1.5 onion, thinly sliced
2 serranos, sliced
4 tbsp lime juice
Salt
Pepper

For Chipotle Chicken

1/4 cup in adobo chipotles
1 cup tomato puree
2 garlic cloves
1/8 tsp ground cumin
1/8 tsp ground pepper
Salt
4 cups chicken breast, shredded
3 tbsp olive oil

For Serving

2 pounds warm corn tortillas
Limes

Instructions

First, in small bowl place sliced onions and serranos, lime juice, salt and pepper to taste. Set aside.

For chipotle adobo, blend the first 6 ingredients until puree.

In a large skillet, heat olive oil and pour the adobo, cook for 3 mins and add the chicken, season. Mix until all incorporated and simmer for 10-15 mins.

Serve it as taquitos with lime juice and pickled onion.
