For the cake recipe

3 cups all purpose flour
1.5 tbsp baking powder
1/2 tsp salt
2 cups granulated sugar
4 eggs L room temperature
2 tbsp strawberry or vanilla extract
3/4 cup canola oil
1 1/4 milk, at room temperature

For strawberry frosting

4 cups confectioners sugar, sifted
1/2 cup strawberry yogurt
1.5 cups butter, softened
2 tbsp strawberry or vanilla extract

For Strawberry Syrup

1/2 cup frozen strawberries
1 cup granulated sugar
1 cup water
2 tbsp lemon juice 1/4 cup brandy

To decorate the cake

1 cup crushed strawberry cookies


First, let’s make the cake. Preheat oven to 220 degrees. In the stand mixer, mix the oil, eggs, sugar, and strawberry extract. At medium-high speed for 5 mins.
Now mix the flour with baking powder and salt.
Add part of the flour and another part of milk, so on. Until all the mixture is fully incorporated. Then add the sugar. Whisk about 5 more minutes
In a 22 cm cake pan, bake for 50 mins. Set aside and cool the cake.
Make the syrup, in a saucepan with low flame boil the water, sugar and frozen strawberries for 20 minutes.
Turn off the flame and with an immersion blender, liquefy the syrup and add the lemon juice.
Let cool and add the brandy.
For the buttercream, in the stand mixer, add the confectioner’s sugar and all the other ingredients. Until you get a fluffy mixture. Set aside.
To assemble the cake: Cut out the top of the cake and level. Cut the cake into two layers, spread the syrup over the first layer cake, then spread the buttercream. Now assemble the other part of the cake, spread more syrup all over the cake, until the syrup is absorbed.
Then proceed the cover all the cake with frosting.
Decorate the cake with crushed cookies and strawberries, serve each slice with the remaining strawberry syrup with brandy.
