Mexican Breakfast Divorced Eggs
This authentic Mexican food recipe is the best! I want to tell you that they are called divorced eggs, why? Because we are going to prepare two sauces, chipotle red sauce and tomatillo sauce, and we will place the refried beans in a line between the eggs and sprinkle with queso fresco.

For Tomatillo Sauce
For Chipotle Sauce
For Huevos Divorciados
Cut the tomatillos in half with serrano pepper and 3/4 cup water
Boil for 15 mins over medium heat
Let cool and blend all the ingredients for the tomatillo sauce
For the chipotle sauce, cut the tomatoes and pour water into a medium saucepan
Boil for 8 mins
In the blender, add all the ingredients for the chipotle sauce
Blend for 1 minute, set aside.
To make divorced eggs, coat fry pan with canola oil, heat over medium high heat add and lightly toasting corn tortillas.
Stack two corn tortillas side by side on serving plate, add 1 egg on each tortilla, pour chipotle sauce and tomatillo sauce, place refried beans in a line between eggs and sprinkle with queso fresco.
