Do you like enchiladas? I love them! The creamy jalapeño sauce is absolutely delicious, you can make them with chicken or beef, with turkey meat they are perfect! It’s easy to make these creamy jalapeño enchiladas.

Ingredients
For Jalapeño Enchilada Sauce
2 fresh jalapeños
500 grs fresh tomatillos
3/4 cup mayonnaise
1/4 onion M
1/2 tbsp garlic powder
1/4 tsp cumin
1/4 tsp ground pepper
salt and pepper
1 cup chicken broth
For Enchiladas
2 cups shredded chicken breast
8 tortillas
1/2 cup cheddar cheese, grated
1/2 cup mozzarella cheese, grated
1/2 cup canola oil
Instructions

Wash and clean the tomatillos and jalapeño peppers.

In a small saucepan, boil the tomatillos and jalapeño peppers until cooked. Cool and set aside.

Blend the chiles and tomatillos with all the ingredients for the creamy jalapeño sauce.

In another medium saucepan, simmer the sauce for 10 minutes until thick. Set aside.

In a saucepan, pour canola oil and fry the tortillas. Set aside.

Preheat the oven, we are going to gratin the enchiladas, the lowest temperature in your oven is perfect.

In a baking dish, make the enchiladas with the chicken.

Pour the jalapeño sauce on top and then grated cheese.

Now bake until the cheese is gratin.
