This creamy chipotle meatballs served with mexican arroz rojo are the best!

For meatballs

2 pounds ground beef
1 egg L
1/2 cup onion, finely chopped
1 tsp garlic powder
1/4 tsp ground black pepper
1/4 cup cornstarch
1/2 tsp baking powder
2 tsp worcestershire

For Creamy Chipotle Sauce

1/4 cup in adobo chipotle peppers, canned
1/4 onion L
2 garlic cloves
1 cup tomato puree
1 cup heavy whipping cream
1/8 tsp cumin
1/8 tsp black ground pepper

For arroz rojo recipe

2 cups rice
2 garlic cloves,mashed
2 tbsp onion, finely chopped
1 cup tomato puree
6 cups chicken broth
1/4 cup canola oil
1 cup canola oil for frying meatballs



In a large glass bowl, mix all the ingredients for meatballs. Set aside.


Meanwhile, we will make arroz rojo. In a large saucepan at medium-low heat pour the canola oil and rice. Whisk until rice is golden brown.

Add onion, garlic and a pinch of salt. Mix.

When garlic and onion is soft, very carefully pour the puree and cook for 5 mins.

Pour chicken broth, seasoning cook for 20 minutes or until rice is cooked. Turn off the flame and cover until served.

Take a approx spoonful of mixture and shape it between your hands into a 1 and 1⁄2-inch meatballs.


In a large skillet over medium heat, add canola oil and fry the meatballs are browned and cooked through.


Remove meatballs and place in a large pot and reserve. 


Now, blend very well all ingredients for chipotle sauce, season. The consistency is creamy, heat the pot with the meatballs and pour creamy sauce, cook for 8 mins. For serve in a medium dish with arroz rojo… very yummy
