This delicious cake is one of my favorites, also my sachertorte. I love this Chocolate-Orange Truffle Cake But today, I will talk about this recipe for chocolate-orange and truffle cake. Imagine: orange marmalade, orange syrup with brandy, orange flavor cake, dark chocolate ganache with orange. This is heaven! In addition we will make crystallized orange peel, delicious !! This cake is inspired in Peggy Porschen Boutique Baking Book, Orange Truffle Cake Recipe, is the best!

Ingredients

For Orange Cake

3 cups all purpose flour
1.5 tbsp baking powder
1/2 tsp salt
2 cups granulated sugar
4 eggs L
Zest of 3 oranges
3/4 cups canola oil
1 1/4 cups milk

For Chocolate Orange Ganache

2 cups dark chocolate, chopped
3/4 cups heavy whipping cream
1 tbsp orange extract
2 tbsp corn syrup

For Orange Syrup

1 cup orange juice
1 cup granulated sugar
1/4 cup brandy

For crystallized orange peel

1 cup granulated sugar
1/2 cup water
3 orange peel, sliced

For Orange Jam

1 cup orange jam
1/2 cup brandy

Instructions

First, let’s make the cake. Preheat oven to 220 degrees. In the stand mixer, mix the oil, eggs, sugar, and orange extract. At medium-high speed for 5 mins.

Now mix the flour with baking powder and salt.

Add part of the flour and another part of milk, so on. Until all the mixture is fully incorporated. Then add the sugar. Whisk about 5 more minutes

In a 22 cm cake pan, bake for 50 mins. Set aside and cool the cake.

Level and cut the cake into three layers. Now we are going to make the orange syrup, boil the orange juice with the sugar over low heat for 12 minutes. Set aside and cool, finally add the brandy. Spread the syrup throughout the cake and cover with plastic wrap. Refrigerate overnight.

The morning you go to assemble the cake: Now it is time to make the ganache, in a bowl add the chocolate and the heavy whipping cream. Microwave at 40-second intervals until heavy whipping cream is hot.

Add the corn syrup and orange extract and mix until everything is incorporated.

You will get a delicious shiny and smooth ganache!

Now, mix the orange jam with the brandy and set aside

We will make the orange peels crystallize, in a saucepan add a little water and boil the peels for 10 minutes over medium heat. Rinse and add the peels now with sugar and half a cup of water, boil for about 20 minutes until the orange peels are completely crystallized, at low heat, the sugar should be made honey. On a cookie sheet or large plate, place the orange peels for 2-4 hours until dry.

To assemble the cake, in one layer of cake add jam with brandy, then another layer and add a thin layer of ganache. Now, the last layer of cake on top and spread the entire cake with jam, refrigerate for 30 minutes.

Finally, spread the ganache all over the cake. Refrigerate for about 15 minutes and decorate with the crystallized orange peels.
