Chipotle “Meatball” Soup
This is a very quick and easy recipe, but it really is delicious, in a few simple steps you will have an exquisite Mexican-style soup.
Chipotle Albondigas “Meatball” Soup
To prepare meat
To prepare rice for albondigas mix
Garlic paste to season albondigas mix
For chipotle sauce
First, add the rice to the cup of warm water. Set aside
Now, in a granite mortar and pestle we will make the garlic paste, place the garlic cloves, pepper and salt.
Just crush and grind. Set aside.
In a large bowl, add all the ingredients of the meat mixture for the albondigas. Then mix with the garlic paste and the previously drained rice.
The prepared mixture should rest 30 or 45 minutes. Preferably, if possible.
Make the meatballs.
Now, we prepare the chipotle sauce. Blend all the ingredients.
In a large pot, heat the olive oil over medium heat. Very carefully pour the chipotle sauce and boil for 5 minutes
Now, pour in the beef stock and water.
Add the meatballs, one by one and finally the vegetables. Boil for 30 to 35 minutes.Until everything is cooked.
Serve with tortillas and freshly squeezed lemon juice
