Birthday Chocolate Cake

Birthday Chocolate Cake

This is the ideal chocolate cake to celebrate a birthday! The frosting is very delicious, if you like strong flavors you can add 1 tablespoon of black cocoa and substitute the milk chocolate for dark chocolate.

Ingredients

For chocolate cake

1 3/4 all purpose flour
2 tsp baking soda
1 tsp baking powder
1/8 tsp salt
3/4 cup cocoa powder
1 cup buttermilk
1 cup fresh strong coffee
3/4 cup olive oil
2 eggs L lightly beaten
1 tbsp vanilla extract

For Chocolate Frosting

1.5 cups milk chocolate, chopped
1.5 cups brown sugar
1 cup heavy whipping cream
1/2 cup butter
1/8 tsp salt
3.5 cups confectioners´ sugar
3/4 cup high quality cocoa

Instructions

Preheat the oven to 350˚F, butter and flour a 9 inch round cake pan and set aside.

Sift the flour, sugar, baking powder, baking soda, salt and cocoa. (Preferably sift two or three times)

In a stand mixer pour the olive oil and eggs, mix until incorporated.

Now, add buttermilk and coffee. When all the wet ingredients are incorporated add flour mix very slowly. The batter is liquid, don´t worry.

Bake for 45-50 minutes or until cake is done. Let cool completely before cover with the frosting, i prefer  wrap and refrigerate overnight.

Make the chocolate frosting: in a small saucepan at low heat place the butter and stir until melted, add brown sugar, salt and heavy whipping cream, mix very well, simmer, and when appear bubbles transfer to a mixing bowl and add chocolate, mix until all incorporated and the chocolate is completely melted.

In this time, add the confectioners sugar and cocoa mixture and whisk.

Let the frosting sit until it is a ready-to-spread consistency on the cake. About 45 minutes or 1 hour.

To assemble the cake: cut the top of the cake and then cut it into two levels. In a cake platter spread 1 tbsp of frosting and place one level of the chocolate cake.

Now spread half of the chocolate frosting and place on top the other part of the cake, cover with remaining frosting the sides and top of the cake. Refrigerate until is  served.
