Authentic Tortilla Soup Recipe

This is an authentic Mexican style tortilla soup recipe. It is very easy and delicious!

This classic Mexican soup recipe is made with epazote, an aromatic herb that you can find in any Mexican market. Panela cheese, guajillos, sour cream and chicharron (fried pork belly or fried pork rinds)

For Sauce

5 roma tomatoes
1 guajillo pepper L (deveined and deseeded)
2 cups water
2 garlic cloves
1/4 cup onion, chopped
1 tbsp fresh epazote, chopped
1/8 tsp black pepper, ground
1/8 tsp cumin, ground
1 cup tomato puree, canned
4 cups chicken broth

For tortilla soup

8-10 corn tortillas cut in equal triangles
1 cup canola oil
1 cup panela cheese cut in cubes
1 guajillo pepper, deseeded and deveined
1 cup avocado, cut in small cubes
1 cup chicharron
1/2 cup sour cream



First, we will make the totopos. In a medium saucepan heat the canola oil and fry the corn tortillas until golden brown, drain and set aside. Reserve 4 tbsp of canola oil.


In a small saucepan, bring to a boil the tomatoes, guajillo pepper, and 2 cups of water for 8-10 mins until guajillo pepper is soft


Blend very well tomatoes, guajillo pepper, onion, epazote, garlic cloves, cumin, pepper, salt and tomato puree.


In a large pot, at low heat pour 2 tbsp of canola oil and very carefully add sauce. Boil for 2 mins and add chicken broth, cook for 8 mins more.


Heat the remaining 2 tablespoons of canola oil and fry the guajillo pepper for 30 seconds, until LIGHTLY golden, drain and cut in thinly sliced. Set aside.


To serve, in a deep dish place the totopos, pour sauce and on top add panela cheese, fried guajillo, avocado, chicharron and sour cream.
